Jamaican Stew
From my Dads notebook, apparently based on "Levi Root's brown stew sauce"
Ingredients
- 1 large onion
- 1 large garlic clove
- 3 tbsp soy sauce
- 4 tbsp tomato puree
- 1/2 tsp allspice
- 1/2 pint water
- 2 tsp dried oregano
- 1 tbsp cornflour
- 2 tbsp lemon juice
- salt and pepper
- 1 tsp chilli powder
- 1 tsp veg stock
- a "meat", sausages, meatballs, chicken or mushroom
- rice to go with finished sauce
Method
- Cook onion and garlic with a little salt until onion is translucent
- Add soy sauce, then tomato puree, stirring over head for a minute after each.
- Add water, oregano, stock and all spice
- Add meats
- When cooked, add chilli powder and lemon, then cornflour and a little water
- Bring to boil, let thicken and serve with rice
