Ciaras Miso Soup
Ingredients
- 2 sheets of Kombu Seaweed
- carrot
- mushrooms, shitake for stronger, or oyster
- half an onion
- seasonings, soy sauce, 1-2 heaped teaspoons of miso paste, kimchi, chilli oil, rice wine
- tofu
- noodles
Method
- soak kombu seaweed in water as it warms up slowly, just before boiling
- when boiling add onion, carrot, mushrooms, leave to simmer till carrots are reaching cooked
- add seasonings, soy sauce, miso paste, any kimchi, chilli oil or rice wine
- leave to simmer, cook noodles in soup during. Add tofu here if you want it.

kombu water and miso paste alone is a decent soup
